INGREDIENTS
1 tablespoon canola oil
1 medium onion, diced
1 carrot, sliced
1 large garlic clove, finely chopped
1 small zucchini, halved
lengthwise and sliced
1 cup free yellow corn (no salt
added), frozen or canned,
rinsed and drained
1 cup black beans, rinsed and
drained
1 cup pinto beans, rinsed and
drained
1 can (14.5 ounces) stewed
tomatoes with jalapeños*
2 teaspoons dried oregano
1 teaspoon dried basil
1½ cups spicy tomato juice
½ cup water
Freshly ground black pepper
1 cup corn chips, lightly crushed,
optional, for garnish

DIRECTIONS

Heat the oil in a medium Dutch
oven over medium-high heat. Sauté
onion and carrot 3 minutes. Add
garlic and zucchini. Cook, stirring,
2 minutes.

Add corn, black and pinto beans,
stewed tomatoes with their liquid,
oregano and basil. Pour in juice
and ½ cup water.

Bring mixture to a boil and
simmer 5 minutes. Season to
taste with pepper, and serve
with corn chips, if using.
Soup can be made ahead and
refrigerated for up to 2 days.
*As a substitute for stewed tomatoes
with jalapeños, sauté a finely chopped
fresh jalapeño pepper with the
vegetables.

At least half of the people
with vascular disorders have no
symptoms. Early and accurate
diagnosis is important. Patients
with vascular disease have a six-
times higher rate of developing
heart disease. Vascular disease
can also lead to strokes, ruptured
blood vessels, blood clots and
kidney failure.
The vascular patient is one
of the most difficult patients to
care for because the disease
(and treatment) involves multiple
systems of the body.
Vascular surgery at Kadlec
With the addition of Dr. Lee,
Kadlec now has around-the-
clock vascular surgery services.
Other Kadlec physicians
performing vascular surgery

Esteban Ambrad-Chalela, MD.
This team has significant
experience in open vascular
surgery and minimally invasive
procedures. This expertise
allows them to care for a wide
range of conditions, including
aortic aneurysm, carotid artery
disease, peripheral vascular
disease, circulation disorders,
and varicose veins, and perform
balloon angioplasty and stenting
procedures.
Dr. Lee also performs a
procedure for patients undergoing
dialysis. Prior to Dr. Lee’s arrival,
many of these patients were
referred out of the area.
While a surgeon, Dr. Lee’s
approach to care is not surgery
first.
“Knowing when to operate
and when not to operate is very
important,” he said.
